Recipe of the Week - Chicken & Rice Soup

Great way to use that FREE RedHot and Chicken Broth from the Bigg's sale.

4 chicken Breasts
70 ounces chicken broth (cans, carton, or homemade)
28 ounces water
2 Bay leaves
10+ dashes RedHot
1 T Emeril's original seasoning
1 T Hickory Smoke salt or Liquid Smoke - optional (but makes it delicious)
1 c onion, chopped
1 c celery, chopped
1 c carrots, chopped
1 c rice

Boil Chicken, cool, and shred
Combine all ingredients, except rice, in large pot
Simmer for approx 30-45 minutes
Remove Bay leaves
Add Rice
Cook another 30 minutes or until rice is tender
