Enchiladas- use some of your recent free finds!
I used 2.5 pounds ground beef from the 40% off rack at Meijer = #3.59
(You can easily make this with only 1 pound ground beef, I am just making enough for 2 meals)
2 cans Meijer tomato sauce = $.59 each = $1.18
1 flour tortilla from Aldi $1.25?
2 packages McCormick taco seasoning = FREE
1 Breakstone sour cream = FREE
1 package Kraft Mexican shredded cheese = $.69
Total for 2 meals = $6.71
Appetizer
1 bag Grande Tortilla chips $.50
1 jar Picante salsa = FREE

Brown ground beef and add seasoning packets (follow packet directions)
Put 1/2 can of tomato sauce in bottom of 9x11 pan
Warm tortillas in microwave so they are easier to work with.
On each tortilla, put a spoonful or 2 of tomato sauce, heaping spoon of ground beef, and a big pinch of cheese.
Roll up
Roll again in pan of tomato sauce.  You want to coat the tortilla so that it doesn't dry out.
Once you have finished the whole pack or tortillas, or once you run out of meat, put the remaining tomato sauce on top of enchiladas.
Cook on 350 for 30 minutes
Top with remaining cheese
Cook another 10 minutes
Enjoy!
