Thursday's Tip of the Day - Banana Bread

What can you do with your bananas when they are starting to go bad??? Make Banana Bread!! If you don't have time to do it within the first days of them turning bad, stick them in the freezer. When you are ready to make your bread, let them thaw out completely. Yes, they will be nothing but mush, but that makes them even easier to work with in banana bread. 2 1/2 c. Flour
1 2/3 c. sugar
1 1/4 teaspoon baking powder
1 1/4 teaspoon baking soda
1 teaspoon salt
2/3 c. applesauce
2/3 c. low fat buttermilk
2 eggs
3 large ripe bananas or 4 small bananas

Mix all ingredients in a bowl. Bake at 350 until done. We love to make these into muffins.
